Q. I’m planning a fishing trip to Petersburg, Alaska and would like info on having my fish catch processed by Coastal Cold Storage to freeze, pack and ship to my home. How does that all work?

A. First you pick up your bait and ice before you go out fishing. (We can also provide sandwiches and soda, if you'd like.) When you've finished fishing for the day, your Skipper will radio ahead to let us know how many totes to bring to pick up your fish, and your estimated time of arrival. That way we are ready to send the truck to the dock to pick up your fish (or we can send a plane or boat out to where you are fishing to pick it up). We will either process it right away (depending on your travel plans) or ice it down until the next day when we will clean and cut up the fish (to your specs), getting it ready to blast freeze (we have two blast freezers that go from 60 F to –25* in seven minutes). We then package and box your fish and store it until your flight. 

When it is ready to go, we apply LACEY ACT labels (according to federal regulations) verifying that the contents have been inspected and are to be shipped to the locations you have provided for the shipping labels. On the day of your flight we load your boxes onto our truck and drive your fish to the airport to be shipped to your specified location.

Q. What does it cost to have you to do all of the above picking up, processing and packing of my fish to prep it for me to take home?

A. The charge is a flat fee of just $1.20 per lb. on the incoming fish weight (which does not include any shipping costs).  More info  If you would like us to smoke your fish for you there is a $3 charge on the incoming weight. We turn out best smoked salmon you ever tasted! You can let us know at the time we pick up your catch.

Q. What shipping methods do you use?

A. We put your frozen fish in good quality Styrofoam coolers and then add bubble-wrap and non-toxic gel-ice to complete the shipping container. Labels that are required by law are added.

Q. Who do you do your shipping through?

A. Absolutely all of our Alaskan products are 100% ALL-NATURAL, FRESH-CAUGHT, FLASH-FROZEN AND WILD... and not ever, ever farm-raised. There are no additives and no preservatives in our Alaskan products!  Order Info

Q. How long can I keep the wild Alaskan fish frozen without losing too much flavor or texture?

Q. What are Petersburg Prawns?

A. Petersburg prawns are also called spot prawns and are cold-water shrimp that have no vein.

Q. Do you sell clams and oysters?

A. Not to ship, but we do sell them locally.

Q. What is Lutefisk?

A. Lutefisk is made from air-dried whitefish (normally cod, but ling is also used), prepared with lye, in a sequence of particular treatments. The first treatment is to soak the stockfish in cold water for five to six days (with the water changed daily). The saturated stockfish is then soaked in an unchanged solution of cold water and lye for an additional two days. The fish will swell during this soaking, attaining an even larger size than in its original (undried) state, while its protein content decreases by more than 50 percent, producing its famous jelly-like consistency. When this treatment is finished, the fish (saturated with lye) has a pH value of 11–12, and is therefore caustic. To make the fish edible, a final treatment of yet another four to six days of soaking in cold water (also changed daily) is needed. Eventually, the Lutefisk is ready to be cooked.

After the preparation, the Lutefisk is saturated with water and must therefore be cooked carefully so that it does not fall into pieces.

Lutefisk does not need any additional water for the cooking; it is sufficient to place it in a pan, salt it, seal the lid tightly, and let it steam cook under a very low heat for 20–25 minutes. It is also possible to do this in an oven. There, the fish is put in an ovenproof dish, covered with aluminum foil, and baked at 225 °C (435 °F) for 40–50 minutes.

When cooking and eating Lutefisk, it is important to clean the Lutefisk and its residue off of pans, plates, and utensils immediately. Lutefisk left overnight becomes nearly impossible to remove. Sterling silver should never be used in the cooking, serving or eating of Lutefisk, which will permanently ruin silver. Stainless steel utensils are recommended instead. 

Q. Can we order authentic Lutefisk to be shipped to us from Petersburg?

Q. How does Alaskan Brown Crab taste compared to Alaskan Red King Crab?

A. Brown crab tastes very similar but the shell is a little different and the meat fill is sometimes not as full.

Q. What is the difference between your Alaskan halibut cheeks and halibut fletches?

A. Fletches are actually fillet of halibut. Halibut cheeks are more like lobster claw meat than lobster tail (a bit stringy).

Q. What are spot shrimp?

A. Local cold-water shrimp with no vein also known as Petersburg Prawns.

Q. What are crab clusters?

A. It’s a half a crab on the King Crab there are 3 legs on a claw and on the Dungeness there are 4 legs per claw. Two halves serve one person.

Q. Do you sell pickled herring?

A. We sure do, but only locally, not to ship.

Q. What are “geoducks” (pronounced gooey duck)?

A. The geoduck [1] Panopea abrupta, is a species of large saltwater clam, a marine bivalve mollusk. The shell of this clam is large, about 15 to over 20 cms in length (about 7 to 9 inches), but the tremendously long siphons make the clam itself much longer; the "neck" or siphons alone can be one meter in length.
